Chop half the onions and set aside the remainder. Heat 2 tablespoons of the oil in 2 large saucepans and cook the chopped onions until softened, about 5 minutes. Stir in the tomatoes, garlic, salt and pepper. Reduce heat and simmer for 25 minutes, stirring occasionally. PurÄe the sauce in a blender or food processor. Heat the remaining oil in a frying pan and cook the sausage for 30 minutes, turning from time to time to ensure even cooking. Heat the butter in a frying pan and cook the remaining onions over low heat until softened, about 15-20 minutes. Season with salt and pepper. Stir the cooked onions into the sausages and cook for 5 minutes longer. Serve the sausage surrounded by the onions. Pour the tomato sauce over the sausage before serving. Serve with boiled potatoes.
